Text Box: Alborz is the only Persian restaurant serving the East Side.  However, it not just Persian in cuisine. Alborz’ owner is also an artist.  He has decorated the walls with beautiful Persian calligraphy of verses by great Farsi poets: Rumi, Sa'adi, and Hafez presented in rich colors for which centuries-old Persian art has been known.  The fresh kabobs and stews will delight your palate and the soft atmosphere creates a calm mood in which to enjoy the wonderful cuisine while surrounded by serene art.

Text Box: Our restaurant is named after the grand Alborz Mountains which served as the backdrop to millennia of Persian culture.  Present Persian cuisine originated with the spices and searing style of cooking of the original settlers of the region who believed food of nature nourishes the body and soul. Food was perceived as a blessing and a manifestation of love, thus preparation of food was a ritual and meals were a time to cherish this blessing of nature.

Text Box: Centuries later, Persians use these same spices as well as various new spices introduced from the East through the 'silk road.' Persians have developed cooking techniques to bring out the full taste of the ingredients in a healthy manner. For example, cooking of rice has been perfected to extract the starch while retaining all the valuable nutrients and delicious flavor. This technique creates our aromatic and fluffy rice that is guaranteed to delight your palate. Also, seasoning and searing of kebabs is done in such delicate manner as to eliminate fat and bacteria but maintain the mouthwatering flavor. After using traditional Persian spices to marinate the meat, a metal skewer holds the kebab while searing over an open flame, which allows the kebab to cook evenly from the inside to the outside. 
At Alborz restaurant, we stay true to these traditions to ensure the quality we have come to believe and respect. It is our goal to provide our customers centuries of traditional cooking in a pleasant atmosphere.
